How Instant Coffee is Made
Instant coffee is essentially liquid coffee turned into powder. But you’re probably wondering, how can that happen? Liquid turning into a powder? Let’s explore.
There are two methods of making instant coffee. One of the methods is called spray drying. This method is used for liquid coffee. Liquid coffee is sprayed through extremely hot and dry air. The liquid coffee particles will turn into powder, which is now an instant coffee.
The other method is called freeze-drying. This is a process which forces frozen coffee to undergo chemical sublimation, a process which forces ice to vaporize without undergoing liquid stage. This process, like the spray drying process, leaves behind instant coffee powder.
These methods, however, affects the aroma, flavor and caffeine content of the coffee. Out of the two methods, however, freeze-drying leaves more aroma intact, so you can say that it does a good job of freeze locking the aroma (just kidding).
In order to make up for it, instant coffee manufacturers add additional flavor and aroma compound to make it taste and smell as close to brewed coffee as possible.
Instant vs Regular Coffee
Now we know that the process involved in making an instant coffee affects its flavor and aroma. Now, does that mean its health benefits are also affected? The answer is a resounding yes.
However, the difference isn’t dramatic. That means you can get almost all of the health benefits of a regular coffee in an instant coffee. The difference in terms of vitamins, antioxidants, minerals and caffeine content isn’t that huge.
Where instant coffee loses, however, is in potassium levels. Regular ground coffee has around twice the amount of potassium content compared to instant coffee. But is it that groundbreaking? If you look at it in a big picture, it’s really not because potassium and other antioxidants, minerals, and nutrients can also be obtained from other food sources. It’s not like coffee is the only source of nutrients we have!
If there’s one advantage instant coffee has over regular ground coffee, it’s the caffeine content. Instant coffee generally has a lower amount of caffeine compared to regular brewed coffee. A cup of instant coffee has around 30-90mg of caffeine while a cup of regular brewed coffee has around 60-140mg.
In the end, regular coffee and instant coffee is almost identical when it comes to health benefits. What’s important to consider here is the amount of coffee you drink every day. It’s obvious that you can drink more instant coffee than regular coffee on a daily basis because of the caffeine difference, but it’s always important to remember to control your intake to a reasonable amount.
